Jane's Best Pumpkin Muffins

Pumpkin Muffins

  • 1 egg
  • 1/2 C milk
  • 1/4 C vegetable oil
  • 1/4 C cooked or canned pumpkin
  • 1 tsp vanilla
  • 1-1/2 C flour
  • 1/2 C sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 C chopped dates
  • 1/2 C chopped walnuts

Preheat oven to 400. Grease 12 muffin cups. Combine liquid ingredients in medium bowl, mixing well. Combine dry ingredients in separate bowl, mixing well. Add dry to wet, gently mix. Then add dates and walnuts. Fill muffin cups 2/3 full. Sprinkle tops with sugar, cinnamon-sugar or coarse sugar. Bake 15 minutes.

Notes:
- Replace some of flour with whole wheat, all or some of sugar with brown sugar.
- Substitute squash for pumpkin, raisins for dates, pecans for walnuts.
- This recipe doubles, triples, quadruples very well.
